    While many delicious coffees aren’t in fact organic, we are still keen organic food consumers and want to support its promotion. Our opening offering is a Fair Trade Organic cup from the Department of Tolima in Colombia. With its exquisite fragrances, we’re really excited to feature it as our first organic offering.

  • Tasting notes: this is a lovely, mellow cup with minimal acidity and delicious nutty and mossy notes to it.

    Another one of Indonesia’s 18,000 some-odd islands, Sulawesi tends to use the same wet-hulled process as Sumatra. And as with Sumatra, the process adds thick, treacly body, whilst the flavour tends more towards the woody, mossy notes. The ideal cup to pair with milk chocolate.

  • Tasting notes: Expect notes of cured pipe tobacco, and even a pronounced acidity to balance its thick texture and generous body.

    Wet-hulled, from the Indonesian island of Sumatra. This coffee is all about body and rich, exotic flavours to transport you to the moist tropical highlands it grows in. This wacky exotic taste comes from a processing method that Sumatran farmers developed to dry coffee quicker in their very rainy climate. They pulp, ferment and wash their coffees as if they were going to do a traditional washed process. Next, however, instead of waiting for the seeds to dry before peeling their parchment skin, they hull it when it is still wet and soft, and dry it naked in the sun. The resulting rich taste – once you’ve had it – is unmistakable and idiosyncratically Sumatran.

  • Brazil - Mogiana

    Tasting notes: Nutty, gentle “just” coffee taste

    The spiritual home of the pulped natural or “honey processed” coffee is there for the lover of mild, sweet cups. A comparatively low-grown terroir – rarely over 1,000 metres above sea level – it enjoys highly distinct wet and dry seasons. For our introductory cup, however, we have chosen a full natural from the Mogiana region of Sao Paulo, meaning a bean that has been dried with all its fruit intact, giving us a cup that tastes quite simply of gentle coffee.

  • Tasting notes: Milk chocolate and tropical fruit

    The Kenya of Central America, Guatemala arguably has the finest flavours in the region’s coffee lineup. Some of the highest-grown coffee in the area, Guatemala not only has refined tastes and pleasing acidity, but it often expresses delicious milk chocolate notes. The resulting cup is satisfyingly balanced. The country’s highly volcanic soil – result of some 37 volcanoes – and the fact that it still grows some of the older, more elegantly-flavoured coffee tree varieties, contribute to the superior cup quality.

    For lovers of freakish acidity and cassis extravaganza, we’ve got to have a Kenya. For our inaugural roast, we decided to lash out and source this AA Plus cup. Extravagant in cup quality – if you love big juicy acidity and full body, this one’s for you. We’ve roasted it so you taste its characteristic notes, but without being affronted by the acidity.

  • Tasting notes: Jasmine blossom, bergamot

    As the home of Arabica and all that is refined and pure in coffee, you’ve got to have a fine Ethiopian coffee. The fragrant, floral and highly delicate Yirgacheffe we chose as our opening offering happens to be a Fair Trade Organic certified coffee…though in our view it’s the provenance, not its certification that makes this cup taste so good. Yirgacheffe coffee reaches up to 2,200 metres above sea level…heights that ensure a dense bean, long to develop, thus profound in its elegant flavours.

  • Tasting notes: Lightly savoury, smooth, gentle tropical fruit notes

    Here because – quite unbiased, honestly –we think it’s the best coffee in the world. PNG is one of those origins where vagaries of history have kept the old tree varieties, with their elegant flavours and great aromatic dimension. Blue Mountain Typicas, Bourbons and Arushas give PNGs their gentle, tropical fruit sweetness, reminiscent of jackfruit or ripe papaya. Underlain by substantive body, this coffee just melts in the mouth. We chose our opening offering from a farm in the Western Highlands Province called Kigibah, which tempted us with its savoury sweet flavour.

    So named because we want espresso to express deliciousness, not aggression. We believe it should be the little drop of digestif that finishes a meal. It shouldn’t bite your tongue off, it should go down smoothly, helping you complete the pleasure of your meal. For this, we have chosen a sweet natural Brazil , combined it with a mélange of finely-flavoured washed Arabicas and the tiniest smattering of high-end Indian Robusta for its hefty chocolate notes. Named to honour the many suns Brian watched rising over the East Coast Parkway of Singapore.
